Pasta made from bajra or pearl millet may be a healthier option, says a study. Millet pasta contains more protein, fat, and mineral content than wheat pasta. However, the texture and cooking properties are better in pasta prepared with wheat because of gluten. As the grey color of millet may not be appealing to many, researchers soaked the millets in hydrochloric acid to give it a lighter color. Though the protein content is higher in natural colored millet, depigmented millet is also nutritious because certain ‘anti-nutrients’ get removed during soaking and processing of millet.
